Girolles, also known as Chanterelles, are a strong contender for the title of most prized wild mushroom. They give off a sweet apricot aroma like no other edible wild mushroom.
The best way to eat Chanterelles is to sauté them in butter with a little garlic and parsley on toast. It’s so simple, but really hard to beat. However, they hold their shape and texture admirably in a stew or curry, transform a risotto into something truly great, and can be pickled or dried and made into a powder to preserve them for enjoyment all year round.
