This mushroom has a woody, apricot aroma that can be smelled throughout the forest where it grows. The yellow chanterelle can be paired with lemon and other citrus fruits without losing its character.
It is best served with butter, oil and light garlic. Chanterelles are good to pickle and use in salads or as a condiment, and if you dry sauté them after washing, you can add them to any dish with good results. Chanterelles make an excellent cream soup.
