Ossau-Iraty cheese has its origins in the pastoral and cheese-making traditions of the Basque country and Béarn. The first traces of livestock farming in the western Pyrenees date back to Neolithic times. The Latin-language Roman writer Martial mentioned Pyrenean ewe’s milk cheeses sold on the Toulouse market. From the 14th century onwards, peasants organized themselves by dividing the estive valleys into communities. At this time, tomes were used as currency to pay leases and sales contracts, and represented the peasants’ primary source of income.
Ossau Iraty is full of flavour that melts in your mouth. This cheese has a slightly oily texture with a savoury and sweet nutty flavour with hints of figs, hazelnuts, and olives. Its Hard texture is slightly elastic and its rind is light brown to grey in colour.
Add a touch of sweetness with a traditional Basque black cherry.
