Washed in honey mead
Named after an alternative name of the River Thames, Oxford Isis is a recent cheese created in 2003 that gained a quick popularity among cheese lovers. Made in Oxforshire, this soft washed-rind can be compared to the French tangy Epoisses. Its pungent tang is nicely balanced by its regular wash in honey mead while its creamy paste develops a pronounced flavour and flowery aroma. Perfect sprinkled with cumin seeds and accompanied with a floral whites wines or an Ale beer.
Wine Pairing:
Red wines (Beaune, Nuits-Saint-Georges)
White wines (Meursault, Chardonnay, Riesling)
Ales (Belgian Dark Ale, India Pale Ale)
