I can’t stop eating this, despite my wife warning me against high sodium intake. Perfect as a snack, appetizer, or crumbled over your pasta of choice. The rind should be great for flavoring soups. However, if it’s your first time trying an alternative to Parmesan, get a lesser-aged Parmigiano, because this might be a bit strong for you.
