After reaching two years old, every Parmigiano-Reggiano wheels are carefully analyzed by the Italian Consortium Parmesan Cheese. Only a few exceptional wheels selected by the Consortium are allowed to pursue their maturation process up to 7 years. This 7 years PDO Parmigiano made by the awarded Parmesan specialist Bonat is a rare jewel. Its halzelnut and woody flavours are even stronger. A real sensitive experience.
