With less tannic structure than the Languedoc Pézenas AOC, but with much more spectacular flavours, the IGP Pays de Caux makes it greatly on roasted lamb and chicken. Very demonstrative in its youth, it’s a great drinker from now on, with the juicy aromas and peppery notes of Syrah and Merlot.
