Made from 80% of goat’s milk and 20% of cow’s milk, Persillé de Tignes is a rare cheese from Tarentaise in Savoie.
Its production requires a special process: for five days in a row, goat’s and cow’s milk is poured over the curdled milk of the day before. The acidity of the curd milk creates a crumbly paste that offers light lactic, sour cream, and goatty aroma while young. Aged, it will develop more rustic aroma and get an intense fruity bouquet.
