This rustic terrine is made from coarsely ground, high-quality pork (shoulder and belly), seasoned with a simple, aromatic blend of garlic, parsley, thyme, and a touch of brandy. Slowly cooked, it develops a moist, coarse texture and a hearty, savoury flavour that is both familiar and deeply satisfying.
The quintessential Lyonnais starter. Enjoy a thick slice with crusty bread, strong Dijon mustard, and pickled onions.
