These organic Ostara potatoes from France are grown on the Île de Batz, a small island off the coast of Brittany known for its exceptionally rich soil. The island is regularly covered by high tides, which deposit sand and seaweed on the fields, creating a natural fertiliser rich in trace minerals. This unique terroir gives the Ostara variety a distinctive character: a thin skin, often lightly covered in sand, and a firm, waxy flesh with a delicate, nutty and buttery flavour.
To enjoy them at their best, cook them with the skin on to preserve their flavour and texture. They are ideal for roasting whole with olive oil, sea salt and fresh rosemary, or for sautéing until golden and crisp on the outside while remaining tender inside. They also work beautifully steamed or boiled for salads, where their firm flesh holds its shape and absorbs dressings without becoming mushy. For a simple and elegant side dish, toss warm boiled Ostara potatoes with good olive oil, flaky salt and chopped herbs such as parsley, chives or dill.
