Native from Columbia and Southern Central America, sweet potatoes were brought to Asia after Colombus’ discoveries. They were introduced to Okinawa, Japan, in the early 1600s by the Portuguese and became a staple as they helped to prevent famine when rice harvests were poor. Characterised by their deep purple flesh, sweet potatoes violet have a rich, almost winey flavour with a creamy texture. They are denser and drier than regular sweet potatoes, which is why moist cooking methods and longer times are recommended.
