Probably one of the most popular cheeses from Asturias, born during the civil war in Cantabria before gaining more interests in the 70’s in Asturias region. This raw goat’s cheese milk is pressed in linen clothes that gives to the cheese its specific pattern. During its ageing, the producers wash the rind with brine to obtain this light ocher and orangey rind to the cheese. Underneath its natural rind, the texture is dense, smooth, elastic, and creamy. The flavours and aromas are milky and smoky.
Smoked with oak and beech wood, this authentic cheese is ideal in a sandwich or just like this for snacking.

it’s really very milky cheese with a hint of sourness. it seems that Spain’s cheese is not as strong as French cheese. I like it for snacks.
