Originally from the Andes, it belongs to the family of leafy vegetables such as spinach, but nutritionally resembles cereals. Also called Inca Red, it was the choice of Inca soldiers, who believed the red colour gave them strength during battle.

Compared to white quinoa, the red variety holds its shape slightly better after cooking.

Quinoa has great qualities: very digestible, gluten-free, low in lipids, but rich in dietary iron and protein.

To be enjoyed hot or cold, it is a very good accompaniment to meat, fish and vegetable dishes. It also replaces rice or pasta in salads, perfect for a gluten-free diet.
