Riberiego means ‘Irrigation’ in Spanish, as this producer wanted to pay tribute to the shepherds and their herd of ewes who did not practice the transhumance and remained instead in their usual place of grazing along the river banks, doing the hard work of field.
Made only with local ewe herd’s milk following a specific grazing regime that gives a milk of superior quality, the paste has a melty texture as a cheddar. The cheese develops some sweet milk jam or caramelly flavours at first that evolve to a nutty and buttery taste when it is aged.
Wine Pairing:
Red wines (Cabernet Sauvignon, Rioja)

1 review for Riberiego with Black Pepper
Nicolas Guyon –
Absolutely delicious! The black pepper infusion gives this cheese a wonderful, robust flavor without overpowering the base. Highly recommend this one.
