This chilled roasted veal from the Aveyron region delivers tender, fine-grained slices with a delicate, milky sweetness. The meat is pale pink with a thin golden crust from slow roasting. Each bite offers buttery texture and subtle notes of roasted herbs (thyme, bay) and white pepper. Unlike beef, this veal is extraordinarily mildlean yet juicy, never gamey.

Aveyron, in southern France, is renowned for its free-range, milk-fed veal from traditional breeds (Limousin, Aubrac). Calves are raised on their mother’s milk and grass, never confined. This roast is boned, rolled, tied, then slow-roasted at low temperaturechilled overnight, and sliced paper-thin. A specialty of French charcutierspure, simple, and elegant.

Serve chilled (8–10°C) with tuna sauce (salsa tonnata)lemon caper dressing, or remoulade. Also try on crusty baguette with cornichons, in salads with arugula and parmesan, or rolled with roasted peppers. Pair with dry white (Savennières) or light red (Beaujolais). A perfect summer proteindelicate enough for picnics, refined enough for starters.

Basic cooking instructions:

  1. Remove from refrigeration and let sit at room temperature for 30-45 minutes.
  2. Preheat oven to 160°C. Season generously with salt, pepper, and fresh herbs.
  3. Sear on all sides in hot oil in an oven-proof skillet for 2-3 minutes per side.
  4. Transfer to oven and roast for 45-60 minutes until internal temperature reaches 55-60°C for medium.
  5. Rest loosely covered with foil for 10-15 minutes before slicing thinly.
  6. Pairing tip: Best enjoyed with a crisp white wine or a light red from Burgundy or the southwest.
