Maison Gabriel Coulet, established in 1872 in Roquefort-sur-Soulzon, is one of the most respected names in Roquefort production. Now in its fifth generation, the family uses the region’s unique natural caves in the Combalou plateau – ideal for humidity and ventilation under AOP protection.
Roquefort La Cave is artisan-made from raw sheep’s milk, offering a crumbly yet creamy texture with pale ivory body marbled blue veins. Its aroma is strong and earthy with damp stone and sheep’s milk hints; the palate reveals bold, tangy intensity balanced by melt-in-the-mouth smoothness, nutty and salty notes.
Pairing: Matches perfectly with Red Château Capion, Terrasses du Larzac – a fortified Languedoc-Roussillon red whose deep fruit and natural sweetness temper the cheese’s sharpness for indulgent harmony.

This is a rather nice roquefort – creamy and tangy in the right proportions with no metallic aftertaste that some blues have.
