Its texture is firm and tender, but also crumbly without being brittle. Use it crumbled in a salad or make a sauce for your steak it will sublimate all your dishes.

This is rather nice roquefort – strong, but not overpowering. Pleasant creamy aspect to the taste, and a good texture. Goes very well on the Toasts with Cherries, Almonds and Linseeds.
