Made by the Fromagerie du Petit Jabron in Provence, Saint-Domnin is a fresh raw goat milk cheese made near Sisteron in the Alpes de Haute-Provence. This melting Provençal cheese is covered with a sprig of lavender typical of the region and which brings a fragrant note.
This cheese is made following the lactic method that gives the cheese a light and mousse-like texture when young. Its natural slightly bloomy rind offers a yogurt-like taste, floral notes and an incomparable freshness.
Accompanied it with some walnuts and some fresh or dried apricots for a stunning pairing.
Store in the fridge, wrapped in cheese paper, and consume within 2 weeks.

light goat cheese and the lavender taste is quite strong

For me this is fairly straight-forward, quite light, goat’s cheese. It does pair well with the fruit Millers Toasts. I didn’t see the lavender adding much.
