Introduced to the King Louis XIV by the Lord Henri de La Ferte-Senneterre, Saint-Nectaire was first used by peasants to pay their taxes. Saint-Nectaire AOC has a creamy paste with hazelnutty, herbal, and undergrowth flavours. The smell of the rind carries mushrooms, a cellar and hay, which is typical from its ripening process.

Try it with a warm lentils salad filled with shaved carrots and minced apples. Enjoy this treat!
