Cheese Type: Uncooked, Unpressed soft cheese with bloomy rind
Created in 1912 by Francesca Pierucci in Torra-Vescovato, wife, granddaughter and daughter of shepherds, this family business is thus today one of the most important in Corsica. The Pierucci cheese dairy, thanks to an old know-how of several generations, knew how to keep and perpetuate the ancestral tradition over the years of Corsican cheese, guaranteeing to gourmets the quality and the authenticity of their products.
Also called the Brin d’Amour, the Saveur du Maquis is a fresh cheese coated with fine dried aromatic herbs ( rosemary, juniper berries or bird peppers). The texture of the paste is soft and delicate with honeyed nuances and a slightly tangy note on the finish. Surprisingly the herbs and spices do not overwhelm the cheese, but merely hint of the land of origin.
