Serra da Estrela DOP is a traditional Portuguese cheese originating from the Serra da Estrela mountains, the highest peak in mainland Portugal. This cheese dates back to Roman times and is often referred to as the “king of Portuguese cheeses.” Produced exclusively from the milk of the “Bordaleira da Serra da Estrela” sheep, it utilises thistle flower rennet, an indigenous mountain plant, for coagulation. The cheese is handcrafted under rigorous traditional methods, ensuring its unique character and intense flavour.
Visually, Serra da Estrela DOP features a washed, thin, pale straw-coloured rind. Its interior is creamy, unctuous, and almost spreadable, with a white or slightly yellow hue and minimal to no eyes. The cheese exudes an unmistakable aroma, offering a clean, perfumed bouquet with a sweet, herbaceous finish and a lightly acidic touch. It’s often enjoyed by scooping out the soft core with a spoon.
To complement the rich and creamy profile of Serra da Estrela DOP, a light Chablis from France, with flavours of lemon, apple, pear, and a touch of minerals, pairs beautifully with the cheese.
