The term Sforzato means ‘strained’ in Italian, thus the grapes are forced through the methods: the grapes are late-harvested in October and left to dry in boxes for 2 months. Then, the appassimento method allows the sugars to accumulate in the brew, resulting in a rich wine. The Infinito symbolizes its potential, with length, elegance and body.
Aged at least 24 months in oak barrels and 8 to 10 months in bottle, Infinito is a great pairing wine. With a warm and spicy bouquet, rich notes of berries, fruit in alcohol, cinnamon and pepper, the softness and persistence makes it an ideal match with
red meats or aged cheeses.
