Shropshire, Blue – Long Clawson Dairy

This Shropshire Blue comes from Long Clawson Dairy in Leicestershire, England, a region renowned for its rich tradition of British cheesemaking. Made from pasteurised cow’s milk and matured for approximately 10-12 weeks, it is recognised for its striking orange paste, delicate blue veining and creamy, slightly crumbly texture. On the palate, it combines a rich buttery sweetness with a gentle tang, savoury depth and subtle earthy notes, creating a beautifully balanced blue cheese that is full of flavour without being overpowering.

Long Clawson Dairy was founded in 1911 by a group of local farming families who pooled their milk to make cheese together. It remains a farmer-owned cooperative today, rooted in the Vale of Belvoir and supplied by local farms across Leicestershire, Nottinghamshire and Derbyshire 

Enjoy it on a cheeseboard with crusty bread, pears, apples, grapes, chutney or toasted walnuts. It is also delicious served with grilled meats or added to salads. Shropshire Blue pairs particularly well with Port, a crisp Riesling, a full-bodied red wine such as Cabernet Sauvignon, or a rich stout and malty ale.
