A Scandinavian delicacy, a cross between sashimi and smoked salmon. Gravlax is a recipe for fresh and raw salmon cured in salt, sugar and dill. It is traditionally accompanied with a mustard sauce and a toast of rye bread but even, on a bagel with cream cheese, it tastes marvelous.

    I like this gravlax very much. It’s a significant step up from the general “Norwegian salmon with dill” that’s available fairly widely around town: flavoursome and with an excellent almost melt in the mouth texture. For me this is the perfect brunch on a toasted onion bagel with a little cream cheese.
