Introduced in 1894 by the Peter Henderson Company of New York, the Delicata squash swiftly gained favour and enjoyed sustained popularity through the 1920s. However, it fell out of favour during the Great Depression. It wasn’t until the 1990s that the Delicata experienced a resurgence in popularity, once again becoming a preferred winter squash.
Delicata squash is small to medium in size, featuring a long, narrow, cylindrical shape with grooved skin and lines running its length. The thin, smooth skin has a creamy yellow base with green or orange vertical stripes. Its firm, thick, fine-grained flesh is yellow to orange, with a central hollow cavity containing stringy pulp and flat, hard, cream-coloured seeds. When cooked, Delicata squash offers a sweet, rich, and moist texture reminiscent of sweet potatoes.
Best suited for various cooked applications like baking, roasting, steaming, boiling, and sautéing, Delicata squash is favored in the kitchen for its thin, edible skin, making it easy to slice without the need for peeling.
Stored in a cool, dark place, this winter squash can keep for several weeks at room temperature.
