The Prissutu is made from free-range pigs raised on local feed, then cured with time and sea breeze, following generations-old practices rooted in Corsican charcuterie heritage.
The name Prissutu comes from the Corsican word for “dried” or “cured,” reflecting the artisanal air-curing process that defines this ham’s deep flavour and firm texture.
The terrine has a fine, melt-in-the-mouth texture with the deep, savoury aroma of aged ham. Its subtle saltiness is balanced by the natural sweetness of pork fat, offering a well-rounded and rich flavour that lingers on the palate. It’s a refined yet rustic product that captures the essence of Corsican terroir.
Best enjoyed chilled, spread on a slice of fresh bread or rustic crackers. For a perfect match, serve it alongside a glass of Patrimoniu AOP, Domaine Montemagni, Menhir Rouge.
