The tomato originated in Central America, where it was cultivated by the Aztecs. When the Spanish invaded Central and South America, they seized upon the exotic fruit and sent it back to Europe. Southern Europe then began using the fruit in their cuisines. The Green Zebra tomato is one of the most surprising tomato varieties. Indeed, when ripe, its flesh is green, and its skin is lime green with yellow stripes!
This strain is often referred to as juicy, sweet and sour. It is this balance of flavours that makes it taste interesting. It goes well with other fleshy tomatoes, such as ‘Coeur de Bœuf’. It is delicious cooked in gazpacho, jam, sauce or tart. Of course, do not hesitate to taste it fresh, by making a multicoloured salad.
