Their firm, dense flesh and smooth, bright red skin give them a meaty texture with fewer seeds than many other tomatoes. On the palate, they offer a well-balanced flavour, combining natural sweetness with a refreshing tang and gentle savoury notes.
Use them sliced in salads, sandwiches, tarts and galettes, or roast, grill and simmer them in sauces, soups and ratatouilles. Their firm flesh holds its shape well when cooked, making them especially suitable for savoury galettes and other summer dishes.
