La Tome fraîche de l’Aubrac IGP is a traditional cheese made from raw, whole cow’s milk, produced in the high pastures of Aubrac. It’s crafted shortly after milking, using milk from Simmental and Aubrac cows, and is left unsalted and unaged. Known for its exceptional melting ability, this cheese is a key component in local dishes like aligot and truffade, where its texture and mild taste truly shine.
Smooth, slightly elastic and pale in colour, La Tome fraîche has a fresh, milky aroma and a clean, lactic taste with just a touch of acidity. It’s soft and pliable, almost dough-like, making it ideal for melting into silky, rich preparations or simply enjoying fresh for its pure dairy notes.
Pair it with Languedoc AOC, Château Capion Blanc, 2020. Grown just a few hours south of Aubrac, this white wine’s freshness and subtle fruit notes echo the clean simplicity of the cheese. Their regional closeness brings a sense of harmony to the pairing, enriching the experience with a shared sense of place and tradition.
