Essential for Auvergnat classics like Aligot, Truffade, it is prized for its creamy texture and authentic flavour.
Quick Aligot Recipe (serves 4):
1. Boil 500g peeled Agria potatoes until tender.
2. Mash with 50g butter and 200ml warm cream.
3. Stir in 250g grated Tomme Fraîche over low heat until silky and stretchy. Season and serve hot.
Perfect with crisp whites or light reds such as Gamay.
