The Tommette de Brebis Corse is one of the cheeses of the ancient cheese tradition of the island of beauty. Made from raw or pasteurized sheep’s milk, it is an uncooked pressed cheese with a flowery rind.
This cheese with its brown to grey rind gives a rustic appearance and offers a fine nutty flavour that will gradually evolve towards a spicier and long taste in the mouth as it matures.
