In 1998, Martine Lembeye, the daughter of a cheesemaker, created a local cheesemaking venture to safeguard the traditional cheesemaking heritage of the Béarn and Basque valleys against industrialization. This artisanal approach has fueled the cheese factory’s success, and it continues as a family-run business, now with Sébastien Lembeye, Martine’s son.
An exquisite texture, both firm and creamy. A typical goat cheese flavour with a lingering nutty aftertaste, leaving a long-lasting impression on the palate.
Great to eat it anytime with walnuts, apple or cherries to bring freshness to this mountain cheese.
