This rustic Corsican cheese is produced by Fromagerie Don Simoni, a family-run creamery founded in 1984. Located in the heart of Corsica, Don Simoni is known for respecting traditional island methods and working exclusively with regional goat and sheep milk. Their approach focuses on minimal intervention and full expression of Corsican terroir.
The Tomette blends goat’s and ewe’s milk into a firm, ivory-hued cheese with a natural rind. Its flavour is mild and nutty, with subtle grassy notes from the goat’s milk and a deeper, creamy finish from the ewe’s milk. As it matures, it develops more complexity and a gentle tang.
Pair with the Patrimoniu AOP, Domaine Montemagni, Menhir Blanc. This Corsican white wine offers fresh acidity, floral notes, and a light saline finish that mirrors the island’s coastal influence. It enhances the cheese’s smooth texture and complements its delicate mountain aromas without overpowering them.
