Tomme du Jura looks like a grinding stone which develops orange spots on its rind covered with white moulds. Its yellow semi-hard paste has small holes and releases a smell of cow’s milk. On the palate, the paste is fine, tasty, and melt in mouth, leaving a pleasant aftertaste and a sensation of freshness.
