Roger Longman, a third-generation farmer, has a cheese-making tradition that dates back to his grandfather in the 1930s. In 2004, he ventured into goat cheese production, which was considered a niche market at the time. Tor Pyramid pays tribute to the legendary Glastonbury Tor in Somerset. White Lake, situated near Shepton Mallet with a view of the ancient hill tied to Arthurian folklore, was inspired to craft a pyramid-shaped cheese refering to this iconic landmark.
Tor is an exquisitely crafted goat cheese with a dense, fresh lactic texture. It features a distinctive geotrichum rind, lightly dusted with ash to introduce a subtle peppery note, complemented by a blend of lemony nuances and the characteristic tang of goat’s cheese.
Tor is an excellent choice to elevate any cheese platter. It is ideal to pair with white wines such as Chenin Blanc and Sauvignon Blanc.
Store in the refrigerator, and once opened, consume within 3 days.
