The Toulouse sausage is a staple of southwestern French cuisine, widely recognised across France for its traditional preparation and distinctive taste. Made from coarsely minced fresh pork and simply seasoned with salt and pepper, it has a meaty, full-bodied flavour with no preservatives or artificial additives.

With its natural casing and rustic character, the Toulouse sausage is a key ingredient in regional dishes like cassoulet. It can also be served grilled or pan-fried, accompanied by vegetables or lentils, and pairs well with either white or light red wines.

Quick cooking instructions:

  1. Remove the sausage from the fridge 15–20 minutes before cooking.
  2. Preheat a pan over medium heat or prepare a grill.
  3. Cook the sausage for 12–15 minutes, turning regularly to ensure even browning.
  4. Alternatively, roast in the oven at 200°C (390°F) for 20–25 minutes, turning halfway through.
  5. Ensure the internal temperature reaches 74°C (165°F).
  6. Let rest briefly before serving.
