Their Merguez sausages, classic to North African cuisine, are made from finely ground beef and lamb, blended with spices and just the right amount of fat. Basic cooking instructions: 

1. Remove sausages from the fridge 15–20 minutes before cooking.
2. Preheat your grill, pan, or oven to medium-high heat.
3. Lightly oil the sausages or cooking surface to prevent sticking.
4. Cook on grill or pan for 10–12 minutes, turning regularly to ensure even browning.
5. For oven cooking, place sausages on a baking tray and roast at 200°C for 15–20 minutes, turning halfway.
6. Ensure internal temperature reaches at least 70°C before serving.
7. Let rest for 2–3 minutes before serving to enhance juiciness.
