Perche is an area regrouping 4 departments between Normandie and Loire valley where is produced this cute little farmhouse raw goat’s milk cheese.
Molded with a laddle in a clover leaf shape, Perche has a wrinkled and ashed rind obtained from a daily salting with black salt and natural wood ash. Under a first creamy layer is hiding a chalky heart of a fresh, caprine, lactic and grassy bouquet with hints of undergrowth and hazelnuts.

This is a dense goat’s cheese and rather intense in its flavour in a way that may be off-putting to some. But cheese connoisseurs will like it as something different from generic chèvre.
