Expertly prepared by Metzger Frères, the “Côte Paillarde” is a premium, thick-cut veal chop sourced from young, milk-fed calves raised to the highest welfare standards. This classic French cut is prized for its tenderness and delicate, clean flavour.
This thick, bone-in veal chop features a fine-grained, pale pink flesh that is exceptionally lean and tender. Its flavour is mild, subtly sweet, and less gamey than beef, making it a refined choice.
Best suited for quick, high-heat cooking to preserve its delicate texture and juiciness. A simple preparation with fresh herbs, garlic, and a knob of butter allows its natural flavour to shine. It pairs beautifully with creamy morel mushroom sauce, lemon-butter asparagus, or a light gratin dauphinois.
Cooking Guide:
1. Bring to room temperature for 30 minutes. Pat dry and season lightly.
2. Sear in a hot pan with butter and oil for 4–5 minutes per side until golden.
3. Finish in a preheated 180°C oven for 5–7 minutes until just cooked through.
4. Rest for 5–8 minutes before serving.
