Maison Cruchaudet, a family-run farm in the sun-warmed Rhône Valley, cultivates White Zucchini with quiet devotion. Unlike common green varieties, this pale, cream-coloured squash is a heirloom treasure once grown in monastic gardens and small village plots. Historically, white zucchini were prized for their tender, less watery flesh and ability to hold shape during slow cooking. Nearly forgotten as commercial farming favoured green hybrids, Cruchaudet lovingly revived this gentle variety to preserve a taste of old France.
On taste, the white zucchini is soft and soothing. Its thin, ivory skin barely needs peeling. The flesh is dense yet delicate, with a fragrance of fresh milk and young cucumber. On the palate, it opens with a quiet, clean brightness—like spring rain on stone—then unfolds into a sweet, nutty tenderness reminiscent of white almonds and fresh hazelnuts. There is no bitterness, only a calm, creamy warmth that lingers kindly.
Wine Pairing:
Pair with a crisp Sauvignon Blanc, a soft unoaked Chardonnay, or a light, herbal rosé. For non-alcoholic, try chilled cucumber-mint water or a mild green tea. Avoid heavy reds or acidic citrus.
