Beautiful firm texture and a rich, nutty taste with a subtle earthiness from the aging process. It’s versatile and delicious, perfect for any cheese board

Creamy, nutty, moderately salty. Tastes a bit like Gruyere/Comte but with a softer, more creamy paste. Personally enjoyed this very much and think it’s a great for snacking even without wine pairing. Will try and see how it cooks too perhaps
