Mauri produces this exquisite cheese using pasteurized cow’s milk from a single milking, combined with carefully selected enzymes and molds that create its signature marbling. The cheese is then aged in natural caves for about 60 days at 4–6°C, allowing it to develop its flavour and texture.
Gorgonzola Dolce is a sweeter variation of the classic Gorgonzola, boasting a soft texture with subtle blue-green marbling. Its flavour is delicate, creamy, and sweet, with a pleasant hint of hazelnut. Gorgonzola Dolce is equally delightful as a table cheese or as an ingredient in cooking.
Enjoy Gorgonzola on a cheese platter or simply spread on a piece of bread with a drop of olive oil. It’s also perfect as a sauce for fresh tagliatelle, where it pairs beautifully with slices of caramelized pears.

Definitely a “starter” blue cheese on the mild side, can be eaten on its own without even honey to balance it out. It isn’t “dolce” per se, but it is positively neutral compared to the Piccante version which is actively spicy.
