Kasseri, also known as Kaseri or Ksara in Turkey, is one of the most renowned Greek cheeses, celebrated for its unique and unmistakable flavour. It holds Protected Designation of Origin (PDO) status and has been crafted using the same traditional recipe for over a century by Proikas Dairy in Sohos, Thessaloniki, Greece.
Produced since the 19th century, this cheese is traditionally made from goat’s and sheep’s milk sourced from the Sohos region, with no preservatives or additives.
Kasseri is a semi-hard, pale-yellow cheese with a mild, buttery taste that has made it a beloved choice.
Enjoy it simply on its own, paired with a glass of wine, or as a flavorful addition to snacks like bagels, sandwiches, and toasted bread. For a warm appetizer, pan-fry it until golden and crispy, allowing its edges to caramelize into a savoury delight. It also melts effortlessly into pasta gratins, omelettes, or baked dishes, lending a rich, creamy depth to classic recipes.
It can be stored in an airtight container in the fridge for at least a couple of weeks.
