Lonzu is a cornerstone of Corsican charcuterie, crafted from pork loin that is salted, spiced, and dry-cured over several weeks to develop its distinctive flavour and texture. The Semidei family, located in the heart of the Castagniccia region, has been producing artisanal charcuterie since the 1830s, using traditional methods passed down through generations. Their pigs are raised in Corsica and fed a natural, local diet, which enhances the quality and character of the meat.
This lonzu features a lean, tender texture with light marbling and a subtle rind of fat that melts in the mouth. The seasoning is mild, allowing the full flavour of the pork to shine through, with hints of Corsican herbs and a delicate nuttiness from the curing process. Typically sliced thin and served raw—much like “prosciutto”—it is perfect on a charcuterie board or simply enjoyed with rustic bread.
Pair with Patrimoniu AOP, Domaine Montemagni, Menhir Blanc, a crisp Corsican white wine with floral and mineral notes that cut through the fat and bring out the meat’s subtle herbal nuances. Serve at room temperature for the best texture and flavour.
