Cabrales is THE Spanish blue cheese. This PDO blue is made in the eponym village located in the Asturias region, and produced from raw cow, goat, and ewe milk. Unctuous, Cabrales is maturated for two to four months and has a sharp & strong spicy aroma followed by citrusy notes. Perfect on the top of a roasted grill during your barbecue or paired with some dried fruits and a fresh glass of Sangria!

This seemed to me to be fairly “generic” blue cheese, with the slightly metallic tang that you get in, for example, “Danish Blue”. Not my favourite.
