Fromagerie Baechler, a family-run dairy, was founded by Charles Baechler, who brought his Swiss cheesemaking tradition from Vaud to France, where he established the dairy at Domaine de Broc with his family and herd in 1928.
Renowned for its award-winning cheeses and celebrated churned butters, this dairy produces the Tomme des Croquants in the Lot-et-Garonne region. Made from whole, pasteurized cow’s milk using traditional uncooked pressed methods, this cheese ripens for 6 to 8 weeks to develop a soft, supple texture and delicate nutty flavour. Its rind is carefully rubbed three times with walnut liqueur sourced from the Sarlat Distillery in Périgord, adding subtle aromatic complexity.
Recognized for excellence with a silver medal at the Concours Général Agricole de Paris in 2018 and a gold at the Fromonval ENIL Competition in 2022, Tomme des Croquants with Nut Liquor offers a refined expression of French artisanal heritage.
