Awarded ”I Fuoriclasse” by the Gambero Rosso in 2012
Crafted by the award-winning specialist Bonat and protected by its strict PDO status, this extraordinary Parmigiano Reggiano Gran-Riserva is aged for a remarkable 84 months (7 years). After passing the Consortium’s rigorous 24-month inspection, only a microscopic selection of exceptional wheels is chosen to undergo this ultra-rare, extended maturation.
Over seven full years, the cheese develops a crumbly, deeply granular texture packed with large, crunchy tyrosine crystals. On the palate, it delivers an immense concentration of savory power, unfolding complex layers of roast hazelnut, smoked wood, aged leather, and rich brown butter underscored by a intense, lingering umami finish.
An pinnacle addition to ultra-premium tasting boards, it is best enjoyed in rustic, hand-broken shards alongside aged traditional balsamic vinegar of Modena, dried figs, or toasted walnuts. It pairs magnificently with full-bodied, structured wines such as Amarone della Valpolicella, Barolo, or a fine vintage Port.
Wine Pairing:
White wines (Sauterne, Balzac, Tokay)

Super rare product and you have to buy this whenever it’s in stock!

Extra rich for my pasta

I can’t stop eating this, despite my wife warning me against high sodium intake. Perfect as a snack, appetizer, or crumbled over your pasta of choice. The rind should be great for flavoring soups. However, if it’s your first time trying an alternative to Parmesan, get a lesser-aged Parmigiano, because this might be a bit strong for you.
