As Comté, Beaufort, born in the Middle Ages and descendant of ‘Vachelin’ was, at first, created to keep the milk longer and have a protein source all year long for the family consumption.
Beaufort AOP can be find in 3 versions: Summer, Winter and Chalet d’Alpage. Our Beaufort Summer 2021 was produced between May and October to ensure that the cows graze in the mountain pastures.
The hard and yellow straw paste of this AOC cheese is full of alpine flowers aroma. Creamy, nutty, and buttery, Beaufort is melting on the palate. This charismatic cheese is ideal to pair with walnuts and a glass of Chardonnay.
