Created in 1969, Saint-Flour represents the authenticity and cheese tradition of Auvergne. Passionate about the making of cheese, Fomagerie de Saint-Flour uses its know-how to produce traditional products with high-quality milk. The Saint-Flour cheese, named after the dairy, is one of their speciality.
Made from pasteurized cow milk and matured for more than 65 days, Saint-Flour is one of the creamiest blue cheese in the market, so creamy that the cheese won the silver medal during the annual agricultural contest in France. Thanks to the Penicilium Roqueforti added to the milk in the beginning of the cheese process, a beautiful blue-veined marble develops in its soft paste.
Melting in the mouth, the cheese has a intense blue flavour with salty notes that goes wonderpiecey with a glass of fruity red wine!
