Bleu de Savoie is produced in a small dairy cooperative since 1997, with the milk of local cow breeds Tarine, Montbéliarde, and Abondance that graze fresh grass and hay from the mountain nature reserve of the Massif des Bauges. Its yellow greyish humid hides a beautiful yellow-orange paste with little holes due to the way the producer mould the product.
Using penicillium roqueforti to develop the blue veins, Bleu de Savoie has its own character: Melty, buttery, and salty with a nice persistence in mouth.
Enjoy it with sundried apricot to create a delicious sweet and savoury snack.
Can be stored for up to 3-4 weeks in the fridge in its packaging.

This is a decent blue cheese. A spongy/rubbery texture rather than the mosit crumbliness of, say, a roquefort. The suggestion of pairing with fruit (in my case a quince paste) works well.
