This farmhouse Bleu cheese embodies all the know-how of Alpine cheeses.
The Caves d’Affinage de Haute-Savoie uses a special ripening method : cheeses are matured in a tunnel dug under the mountain more than 60 meters deep.
Made on the farm from a single herd of cows in Haute-Savoie, the abundant and varied flora of the Alps gives a rich milk and an authentic character to this cheese.
Unctuous, sometimes creamy with typical blue cheeses undergrowth hints, it is a nice add to your cheese platter. Bleu Fermier de Haute-Savoie melts easily and will bring a perfect sharp touch to your raclettes or gratins!
Can be stored for up to 3-4 weeks in the fridge in its packaging.

For me this bore a remarkable resemblance to Stilton in both taste and texture (and the way it didn’t really age very gracefully in the fridge when opened). It’s OK, but not my favourite blue cheese by far.
